The tomato should occupy a special place in our diet because it is not only tasty, but also beneficial to health. It provides a good amount of vitamin C, which is a powerful antioxidant and plays a key role in enzyme activation, iron absorption and collagen production, as well as supporting the circulatory system. Tomatoes are also rich in micro- and macronutrients. They are a good source of potassium, which helps to regulate blood pressure, and also contain iron, phosphorus, magnesium and calcium.
